What Is This Machine?

I see many large machines and large parts of machines on the back of trucks up and down I-35. However, this one was parked at a safety rest area and sparked my curiosity? What is this machine, and what does it do? It's bug and red, so I was thinking it may be firefighting related.

I know it's owned by Haliburton, and it's most likely going to the Port Of Galveston to be shipped overseas.

It's either a large pump or a extremely large mobile generator.

Almost correct, but no cigar ... It's a Tuna Salad injector. It's en-route to a local 'Subway' sandwich shop.

It says Halliburton on the side, so one thing we know it does is waste taxpayer money :P
